Originally, higonokami folding knives were used for trimming goose quills for calligraphy, as well as for bookbinding, wood carving or engraving work. Designed with remarkable simplicity, they consist of a copper or brass handle, a carbon steel blade and a rivet, giving them the appearance of a very sharp scalpel. Their popularity is based on this simplicity and their effectiveness, attracting lovers of economical knives.

The success of higonokami is comparable to that of French knives such as Opinel and Douk-Douk. In the early 2010s, these knives gained popularity, similar to the rise of Japanese kitchen knives around 2005. Knife makers modernized the design using improved materials like VG10 steel and wooden handles.
