This sharpening stone stands out for its functionality and exceptional performance. Designed to be versatile, it is suitable for both Japanese and Western-style knives, providing optimal adaptation to all your sharpening needs. Its black silicone base guarantees increased stability, ensuring safe and secure use. The frequency of use of this stone depends on the condition of your kitchen knives as well as the regularity with which you use them, thus providing flexibility adapted to your culinary habits.
Medium grain #1000: for regular maintenance
This grain is particularly recommended for regular maintenance of your knives, because it allows you to maintain a good cutting level without excessively dulling them. In fact, its moderate abrasiveness avoids having to use a coarser grain, thus preserving the material of your blades. In addition, its intermediate fineness is ideal for low HRC knives, thus avoiding excessive finishing which could be unnecessary on less rigid blades.
If you had to choose just one type of grain for your knives, this would be it! By maintaining the performance of your blades without removing too much material, it constitutes an essential element of your kitchen equipment.
Before use, it is recommended to soak the stone for around fifteen minutes. Next, simply place your blade with about a coin's worth of space between the steel and the stone, then move back and forth using light pressure. Repeat the operation on both sides of the blade to obtain optimal results. To test the sharpness of the knife, use a sheet of paper: the result will be immediate, thus guaranteeing precise and efficient sharpening.
