Kikumasamune Sake Brewery was founded in 1659, during the era of the fourth Tokugawa shogun, Ietsuna. The Kano family built a sake brewery on the grounds of their main residence and truly began their sake-making business. During the Meiji period, the 8th generation, Jiroemon kano, invested a lot of money to improve the quality of sake, with the belief that he would "make good sake no matter what", and made improvements technologies that were ahead of the rest of the industry. The sake is brewed using the Kimoto-zukuri method, maintained since the Edo period by a master brewer who is proud to continue making dry sake, a sake that will be difficult to get tired of.
