This sharpening stone has many advantages: it is both functional, efficient and attractive thanks to its dual functionality. It is suitable for both Japanese and Western knives, thus adapting perfectly to your cutting equipment. In addition, its black silicone base ensures optimal stability, guaranteeing safe and secure use. Its frequency of use depends on the condition of your kitchen knives, thus offering flexibility adapted to your needs.
The #3000 fine grain face: for a razor sharp edge
This side is ideal for perfecting the edge of your standard knives, having a hardness of around 60 HRC. Thanks to its fine grains, it also allows the cutting line to be refined, thus offering optimal performance. In addition, it can serve as a bearing for knives with very hard blades, supporting sharpenings up to ultra-fine grains, such as #8000.
The #8000 face with very fine grains: for an impeccable finish
Recommended for finishing, this side allows you to smooth the edge of the knife thanks to the extreme fineness of its grains. It thus fully reveals the cutting quality of the blade, even when the first factory sharpening is inconclusive. Its use is recommended on knives with a hardness greater than 60 HRC, thus guaranteeing precise and efficient sharpening.
Before use, the Wusaki stone must be soaked for around fifteen minutes. Next, simply place your blade with about a coin's worth of space between the steel and the stone, then move back and forth using light pressure. Repeat the operation on both sides of the blade to obtain optimal results. To test the sharpness of the knife, use a sheet of paper: the result will be immediate. The dimensions of the stone are (L) 18 x (W) 6 x (H) 3 cm, providing a generous surface area for precise and efficient sharpening.
